foxes and tomatoes







well hello there... I haven't fallen off a mountain, or in to a river - just fallen off the blog bandwagon. a busy few weeks- friends in town from the east and west coasts, today two baby foxes and a mom were playing on the hill and we all stopped to watch them for a half hour... wonderful.
the garden is looking amazing...kale is huge, peas are looking good, 20 tomato plants in (60 more to plant- holy tomatoes!) and some even have green tomatoes on them already! onions and garlic are huge- radishes are looking good, and the greens, Swiss chard, basil, spinach and lettuce mixes are all growing. all week we have been working on some trellises for tomatoes and cucumbers- they are almost finished! here are photos of the main garden, all the beds i just mentioned, and the garden shed. we finished the trellises (it takes a long time to dig post holes and back fill them! who knew?) yesterday I cooked breakfast and lunch- I think breakfast tacos are becoming a weekly weekend tradition.
Today= holiday! frolicking in southern Vermont with friends, a trampoline and baby chickens!

frosty frost

Sunday it snowed- this morning a layer of frost was all over the grass, and weeds...I hope that putting my plants under cozy blankets of reemay kept them warm enough!

caramelized onion, grilled eggplant, basil i grew, cottage cheese, sharp white cheddar, spinach calzones (with dough from the fabulous dough recipe from vegan with a vengeance)
maple white balsamic grilled Brussels sprouts
huge local greens salad
plum upside down cake

so so so tasty

and a rainstorm brought a double rainbow!

wed nes day

since last I wrote I've been a busy bee.
after edible forest fun camp I had a weekend class: root cellar design.
the language was pretty intense, lots of talk of R values and vulcanizing ... half of it was way over my head, but really interesting. the problem with weekend classes is balancing the "how much do i want to take advantage of everything here and learn ________" vs. how much do i need a day off vs. working (/class)12 days in a row... so i was pretty exhausted on monday. I've gotten onions in the garden and lots of weeding. I picked up my seedlings from the greenhouse across the road and the purple basil i started is beautiful!!! lots of good dinners and breakfasts- nice to be back in the kitchen. and monday i went to an amazing tea workshop at a local herb school. I will post photos of class, food, and frolic soon!
